The engineering and cooking teams at The BBQ Guru have been working hard on the design and function of the new Onyx Oven. We wanted a cooker that was extremely efficient and rugged, yet lightweight and versatile.
The Onyx Oven is an extremely versatile cooking machine. No matter what it is you want to cook outdoors, it can be achieved with the Onyx.

The Onyx Oven's insulated, double wall construction makes it very fuel efficient giving you long burn times with very low charcoal consumption.
It is made for use with a stainless steel catering pan to be used as a removable water/drip pan, this allows you to use the Onyx as a water smoker, a dry smoker, a grill or even a roasting or warming oven.
It holds three 13"x22" shelves with a perfect capacity for backyard barbeque enthusiasts and competition BBQ'ers. There are three (3) shelf positions that hold full catering pans as well.
(This is a very convenient feature that comes in handy at almost any event).

The Onyx Oven is designed to use with any of our BBQ Guru Temperature controls. You will need a control and 10 cfm fan to complete your package if you do not already have one. You will NOT need an adaptor, the Onyx Oven comes complete with one installed.
Frequently asked questions (FAQ?) about the BBG Guru Onyx Cooker and it's use
Q: Must you use the BBQ Guru to control the temp.
A: Yes, it is really the only way since the smoker does not have an adjustable air "input" ..just a hole for the guru fan.
Q: What is the highest recommended temp for you to cook at?
A: With water pan 325 degrees.
With Stone baffle/board 350 degrees (dry roasting)
Direct 400 degrees. (chicken etc. )

Chicken direct on rack above charcoal at 250 to 300
or Chicken indirect w/ stone board and drip pan at 275
Pork loin direct at 350
Pizza / bread direct but with pizza stone on rack at 400
Q: What is the stone board for?
A: Dry cooking - Indirect dry cooking .. .NOT for putting food on . (use it like a platesetter)
Q: Should I use lump or briquette charcoal.
A; Guru recommends lump or all natural hardwood briquettes.
Q: When should I use the water pan:
A: Low and slo barbecue specifically Pork Butts, Brisket, Ribs, etc.
Q: What should I set the top damper at?
A: IF YOU ARE COOKING DRY TOP DAMPER DOES NOT HAVE TO BE MORE THAN 1/8 (One Eighth) Inch OPEN NO MORE
