Mushroom Clouds

A great snack, appetizer, or game day treat. We call them mushroom “clouds” because the flavor explodes in your mouth.  Easy to make and great tasting! You can prepare them in advance and then just grill them when it’s time to start eatin. These were originally made for me by my friend and fellow guitarist Bob Szajn ... we put in a few twists and here they are for you!


Ingredients:
1 24 oz. package of “button” mushrooms
4 strips bacon
2 packages cream cheese
1/2 medium onion - minced
1 garlic cloves - minced
2 - 3 Jalapeno peppers - seeded, deveined (leave in vein if you want heat) and chopped fine
2 oz Shredded sharp cheddar cheese
2 tsp. Tasty Licks BBQ “Flyin’ Swine” rub & seasoning or your favorite BBQ Rub.
Perforated Veggie Grill and ur grill!

Put the cream cheese in the microwave for a few seconds or let sit out at room temperature to allow it to soften.

Meanwhile, preheat your gas or charcoal grill to medium or 400 degrees F. and then cook ur bacon to “medium” doneness - do not let it get to crunchy stage and cut into small bits.


Clean ur mushrooms by soaking them in cold water for a few minutes or brush them lightly to remove all dirt etc. Remove the stems from the center of mushrooms... you are now ready to start the assembly process.
In a bowl, mix bacon bits, cream cheese, cheddar cheese, onion, garlic, pepper and 1/2 tsp of Flyin’ Swine (or your favorite BBQ) Rub.
Set your mushroom caps upside down on your pre-oiled veggie grill and using a small scoop put approximately 1/2 to 1 oz ball onto each mushroom. Then sprinkle with more Flyin’ Swine Rub and ur ready to start grillin!
Put your mushrooms on your grill and get them cooking. We cook these using the indirect method but you can do them direct if using a gasser or if you just don’t feel like setting up your indirect cooking rig.
Just cook them until the cheese is melted and golden brown ...should be 30 to 45 minutes or so. Remove from heat, give them a minute or 2 to let the cheese cool down, plate ‘em and serve ‘em .... viola!
