Hi Fred,
I hope you're too busy on Black Friday to read this. The attached photos are the finished product made according to the recipe I sent you previously. I used 100% Mesquete pellets. The pan contains jalepeno cornbread. We used two packets of cornbread mix according to the instructions on the pack with the addition of chopped jalepeno peppers, onion powder and grated cheese. It gets great when you Traeger it.
The turkey was the best turkey we ever ate. After 5 hours of smoking and 2-1/2 hours of "medium" (165 degrees), it was the most moist turkey you can imagine. There was juice dripping from the leg bones when I removed from the Traeger. I had to bring a bag of leftovers to each of my neighbors. They demanded it. Once the turkey got to about 140 degrees, the smell was unbelievable. I'll tell you one thing, I'll never make another turkey without brining it first. I don't think I'll add the spices like I did this time. They didn't add anything to the flavor. Next time it's going to be 1 cup of kosher salt and 1/2 cup of cider vinegar per gallon of water and that's it.
Owning a Traeger has changed everything my wife and I have ever thought of grilling. It's my hobby now. I have a friend who is a produce and meat salesman. One of his clients got a delivery of what he thought was rib eye steaks, but when he cut the plastic he found it was a 16lb. prime rib. So, my buddy calls me and asks me if I would be interested in buying a 16lb. prime rib for $23.00. We cut 4 1" thick steaks off of it and froze the rest. I'm going to make it for friends, according to the Traeger family recipe on their website. The steaks we grilled on the Traeger, of course. You could cut them with a fork.
