Saturday ... As some of you know, a few days a week and EVERY Saturday , we cook at our store so potential Eggheads can get a taste of how great all food tastes cooked on the Egg. (thusly enticing the innocent them to get an Egg... they will have to buy one if they ever want to experience such great food blah blah blah)
This past Saturday morning, we had a really nice Turkey to cook and of course, we cook burgers all day (to "entice" the potential Eggheads etc.... ) BUT ...first thing in the day a fellow friend from this forum came in and bought our Demo Large. We needed to get that turkey on and didn't have time to assemble another large so we decided to cook the turkey on our Demo XL. This posed the problem of where we would cook the zillions of burgers during the day, to give to customers / etc. ... so I decided to try something that I hade been thinking about for a little while .... cook INDIRECT (Turkey) and DIRECT (burgers) on the XL EGG at the SAME TIME ...without an XL Platesetter.
A well known kettle grill company makes these "charcoal baskets" to hold charcoal off to "the sides" of a kettle grill and every time somebody buys a set, I have been eye-balling them to try on the XL thereby accomplishing 2 things .
#1 - make an "indirect zone" in the middle of the XL #2 - use the XL without sacrificing a half-bag of lump every time!
So , we dug out the "charcoal baskets" (from the famous grill company who's name starts with a "W") a drip pan and a charcoal starter chimney (from the same famous grill company), some lump, the turkey and burgers and here's what it looked like. NOTE : during the day we cooked a zillion hamburgers and a customer came in with some buffalo that we marinated in our Reveo machine and we put that on direct also, all next to that turkey which cooked away while we were grilling right next to it. It worked GREAT ...the turkey was one of the best we have ever had ... only took 2 hours. We prepped it with a lot of one of my experimental rubs and the burgers just get salt and pepper. The customers were gorging themselves all day, turkey, burgers and buffalo.
We used just ONE chimney of lump to cook the entire afternoon, though it was cooling a little after a couple of hours .... it really worked great ...here are the pics below (I hope).

The lit lump is dumped into the baskets, which we put side by side for the dumping part. Note this is BGE LUMP CHARCOAL.
Here we have the lit lump charcoal in the baskets and our drip pan in place.
Insert the "bird" over the drip pan for indirect cooking.
Burgers are now inserted on top of the charcoal baskets to direct cook / grill for taste testing by our customers (and starving musicians) as required.
Here's what the bird looked like after about only 2.5 hours at 375 degrees !!! Scrumptions!
The turkey was really good....juicy, really crispy skin ...this cooker really worked well for this.
