Bob-B-Ques's Spicy Brined Turkey (on the Traeger Lil Tex 11-23-07)

(Note, Bob got his Lil Tex a couple of months ago and is having a blast cooking up a storm. See his emails in our "Happy Customer's" section. Here's another one of his recipes and cook reports)

Bob’s First Brisket on the Treager

1 – 6lb Brisket from Hiway Meats

 Have him trim enough fat to make it even thickness on one side.

Treager’s Rub – both sides (Sprinkled on more Kosher Salt)

Start Treager Lil Tex  and let pre-heat on “Medium” 10-15min.

Place brisket on grill FAT SIDE UP (I used 50/50 Hickory/Mesquite)

Cook on “Medium” for 2hrs. (130 F+)

Cook on “Smoke” for 4 hrs.  sprinkle with more Coarse Kosher Salt.

Take off grill and place in tray with alum. foil.

Cup foil so that you can pour on 8-10oz. of beer without it spilling.

Wrap up completely and place on grill

Cook on “Medium” for 2hrs.

Open wrap and cook for 1- 2hrs. until liquid evaporates

Remove from foil and finish for 1 – 1-1/2 hrs. on “Medium” (160-170F )

Remove to cutting board for 15 min. and slice diagonally across grain.
