At our in-store Turkey Class on Nov. 10, 2007, many folks were blown away by one of the side dishes ...the "stuffing" which was prepared by Dee Dee, also know as "wife-of-Smokin-Guitar-Player" and requested the recipe so here it is.
Dee is sort of known for taking off the shelf, semi prepared foods and enhancing them with add ins / etc.
2 boxes of Stovetop stuffing, cornbread flavor
1 box of Stovetop stuffing, Chicken flavor
1 large onion, chopped
4 stalks of celery, chopped
2 TBS olive oil
1/2 stock of butter.
in a large saucepan, put the oil and butter, heating it until the butter melts. Add the onion and celery and cook slowly until tender, remove from the pan and put aside.
In the same pan, make the stovetop stuffing liquid ingredients and when it's time to add the "boxed" dry ingredients, also add the onion and celery mixture, mix and follow directions on box which typically says to remove from heat and serve.
Since Dee did this a day ahead of our session, she took a 9 x 13 aluminum pan, greased it, and put the stuffing in there. Covered with foil and refrigerated. On the day of our session/lunch, we just stuck it into our Traeger Pellet cooker at 275 for 1 hour or so and it got fabulous!
