(Fred gets KCBS Judging certified)

I noticed that the KCBS (Kansas City Barbecue Society, the world's largest barbecue competition sanctioning body) was having a Judge Certification and Training session in nearby New Holland Pennsylvania, at the Meadow Creek Welding Smoker factory. This seemed like a really good time to learn what judges in these competitions look for in competition barbecue products.

I drove down for the Friday morning session, to find that there were 95 people attending the class, many more than I expected. We were trained on how to properly conduct ourselves as judges, how to sample food and judge appearance, texture and taste. What was allowed and what was NOT allowed in the turn in boxes etc. We also got to sample some pretty good barbecue made by Meadow creek and a local vendor.

After eating about a pound of meat, I now had a better idea of "what is what" and an insiders view of the judging process. Meadow Creek hosted a great event and Fred says thanks to them for their hospitality. Nice Smokers too.
