Here is the ad I saw for the class on Ray's web site. .....The
class goes straight through the night, with everyone prepping and
cooking their own chicken, ribs, pork butt and beef brisket, all chosen
and supplied for you by Dr. BBQ. We’ll also supply all the championship
sauces and seasoning. We’ll share absolutely all of Dr. BBQ’s contest
secrets, from meat prep to presentation. Keep in mind that this class
is heavily aimed at KCBS contests, but we’ve had plenty of novice cooks
attend and have a great time. Speaking of KCBS, there are quite a few
teams winning and giving big credit to this class. The class will be
wrapped up at around 1:00 on Sunday, and your leftovers are yours to
take home.We’d like
you to bring your cooker, but there are always plenty of big cookers to
share if you can’t. We’ll try to get you matched up with a cooker that
you might be thinking about buying. You’ll need to bring your own
refreshments. We supply a limited amount of bottled water, and dinner
on Saturday night and we’ll be having BBQ for breakfast on Sunday. ...............................
and that is how it went ... Ray taught all the techniques he uses at a contest ... I left Detroit with a cooler full of hot brisket, pork butt, ribs and chicken ... I drove back to our friends place in Port Stanley Canada for an evening dinner of totally kick-ass barbecue which I had prepared at the class.
Ray knows what he's doing and to have an opportunity to learn from the master was a great thrill! FB
