ROMAN STYLE PIZZA WITH GORGONZOLA AND FIGS by Tony Gemignani
Works best on a thin crust pizza like Tony's "Roman" style pizza pictured. Roll out your dough with a rolling pin, squeezing out all the air etc. ..then top with shredded whole-milk mozzarella and globs of gorgonzola cheese. Then bake to perfection and when you take it out of your oven, apply dollops of fig preserves like in the picture. We make this pizza all the time and it is always a hit. Most heard comment : " I never thought I liked gorgonzola or figs but this is really great".
