Brisket Injection All taste palates are different, so strengthen to your taste. We recommend starting with 3/4 cup of marinade to two (2) cups of water. Other options are to split 1/2 the water with beer, apple juice, Cola or beef broth.
Place your brisket on a cookie sheet with edges to help catch any excess marinade. Now, using a checker board pattern, inject in every other square, keeping the injecting needle in the center of the brisket meat.
This amount should be enough for two thirteen (13) lb. briskets.
Beef Injection ingredient list: This product consists of hydrolyzed vegetable protein (hydrolyzed soy and corn protein and salt (with partially hydrogenated vegetable oil [cottonseed, soybean] added), monosodium glutamate, sodium phosphate, and xanthin gum.
Pork Injection Mix one (1) cup of marinade to two (2) cups of water. Other options are to split 1/2 the water with different fruit juices, cola or vegetable broth. Use the same system for injecting as directed in the beef injection. Be sure on thicker cuts of meat (as in pork shoulder and pork loins) to reach the center of the meat.
This amount should be enough for two (2) 6 to 7 lb. pork shoulders.

Mix 1/4 cup of Prime Dust and 3/4 cup of Butcher BBQ injection to 2 cups of water. Mix the 2 together to help prevent lumping in the water. You are now ready to inject. Simple to mix. No more adding beef flavored water from the store. Refrigerate after mixing.

After dissolving the phosphate you can add any other product to the mixture for flavoring. Suggested usage for brining is 1 cup of Butcher BBQ Phosphate to ½ gallon of water. For injecting use ¼ cup of Butcher BBQ Phosphate to 2 cups of water. 1 cup equals 1/4 pound.

For brining mix 1/2 cup "Grill" with 8 cups liquid. For injecting mix 1/8 to 1/4 cup "Grill" to 2 cups of liquid. "Grill" is highly recommeded for chicken, but after tasting you will realize it can be used on ribs, steaks, and chops. It will give you all the moistness expected while adding a great flavor.
